Aka my mothers birthday cake! This recipe is also from The Chocolate Deck, and sounded delicious so I knew I had to make it. A birthday is a good excuse right?
2 1/2c. plus 2 TBLS all-purpose flour
1/2c. unsweetened cocoa
1tsp baking soda
1/2tsp salt
1 1/2tsp ground ginger
1tsp ground cinnamon
1/2tsp ground allspice
1/4tsp each ground cloves, nutmeg, ground pepper
12oz. miniature semisweet chocolate chips
3/4c. unsalted butter, softened
1 1/4c. sugar
1tsp vanilla
2 large eggs
1c. dark molasses
Position rack in the middle of the oven and preheat to 350*F. Butter and flour a 10 cup Bundt pan.
Whisk 2 1/2c. of the flour, cocoa, baking soda, salt, and ground spices in a bowl. Toss chocolate chips with the remaining 2 TBLS flour in a bowl.
Beat butter, sugar, and vanilla with an electric mixer on medium-high speed in a large bowl until fluffy. On medium, add one egg at a time.
Whisk molasses and 1cup hot water in a bowl. On low speed, add flour mixture to butter mixture alternately with molasses in 3 additions. Fold in chocolate chips.
Bake 55 minutes, until cake begins to pull away from side of the pan. Cool in pan on wire rack for 20minutes. Invert onto rack and cool completely.
