So while trying to think of a new recipe to try out, I got to see what my new roommate eats all the time...
Lets just say it's not the healthiest diet, But something I noticed was that he eats peanut butter like its candy. In the three weeks living here, I think he's gone through three BIG tubs of peanut butter and is onto the fourth.
Crazy. So I decided that if I made a peanut butter cookie it would be a fav.
This recipe was from the Milk and Cookies Bakery.
There are two parts to this recipe, first the peanut butter cookie base dough, then making it into a childhood favorite...
Combine:
1 1/2 cups AP flour
1/2 tsp baking soda
1/2 tsp baking pwd
1/4 tsp salt
Set aside
In a mixing bowl, combine:
1 1/2 cups unsalted butter
Begin beating on low speed. Add:
1 cup light brown sugar
Increase to medium speed, and beat for ~4minutes or until light and creamy.
Add:
1 cup smooth peanut butter
Beat to incorporate.
Beat in:
2 large eggs - one at a time, scraping down the sides of the bowl after each.
Beat in:
1 tsp vanilla
Cover tightly in plastic wrap.
Refrigerate 1 hour, or until firm.
To make into PB & J cookies:
Preheat oven to 325ºF.
Bake for about 8 minutes, or until golden brown.
For the jelly, either push a thumbprint into the dough and after baking add jelly.
Or smear one cookie with jelly, and sandwich with another.
Since I'm a chocolate lover, I decided to also add chocolate...
